what do i do with snowed on vegetables?

it snowed before i could protect the last of my celery, parsley, leeks, swiss chard and carrots. the snow's melted now, and most of the plants look to be alive. the celery looks pretty terrible, but it's still alive.

so what do i do with the plants now? are they still edible? or should i just dig them up and throw them out?

They should still be perfectly edible. In fact, the flavors some vegetables (especially leeks, kale, and brussels sprouts) are improved by a little frost.

TRIM OFF THE SLIMY PARTS (THAT ATTRACTS SLUGS & SNAILS) & SEE WHAT GROWS BACK IN THE SPRING.K
