I know pansies, cyclamen and mums will grow during the winter in North Texas. What else will grow here, too?

I am not much into perennials that will bloom, other than the ones you mentioned and Helleborus, but can name a few shrubs or the like:
Scientific names are uncomfortable and strange but avoid confusion.
Camellia, Chimonanthus praecox,Mahonia,Hamamelis,Corylopsis, Edgeworthia,Prunus mume,Jasminum nudiflorum. Some really are for very early Spring.
Also there are winter blooming bulbs that may wind up with snow falling on them.

Thought of more, but shrubs.
Lonicera purpusii, fragrantissima and standishii. Rank growers, on some states' unwanted invasives lists.
Stachyurus praecox, which comes with yellow or purple-tinted flowers.
Also consider the huge selection of plants, both perennial and shrubs and trees with colorful berries.

Harold,
I live in the Texarkana area and can verify that all of the plants and shrubs that they listed will grow in this area. Some of them prefer cooler temperatures and different climates, but will survive well enough here for us to enjoy their flowers. The lonicera fragrantissima is also called Winter Honeysuckle. It's great for this area, as is the Chimonanthes praecox, which is called Wintersweet.
I am sure that you have seen Camellias and Mahonias growing in your area and have seen them at the nurseries, but the other plants will need to be ordered online. Email me for the companies that carry them if you are interested.
Some other plants for winter blooms:
Daphnes, crocus, sweet olives, michellia maudiae, and sarcococca.

The T.A.M.U. Aggie Hort web pages may have something of interest, you might want to look there.
