When should I harvest my herbs?

Hi everyone, I usually hang out at the cactus and succulent forum, so this is my first post here.

I planted herbs for the first time this year and am wondering when to harvest them. I have sage, fernleaf dill, sweet basil, cilantro, cat nip, peppermint, spearmint, thyme, oregano, arugula, chives, rue and lavender.

The thyme and oregano are the only ones that haven't flowered yet.

Harvest basil now, my wife makes pesto out of ours. Cilantro is too late if it flowered as it will be bitter. Sage, thyme and oregano should be ok now, too. Sorry, can't help on the rest.

Hi, tj, nice to see you here! I harvested a bunch of stuff today, before it rains, AGAIN!!! Thanks for replying.
