Seminole Squash/Pumpkin - dry or wet flesh???

Hello all and Happy New Year,

I have just cooked my first Seminole from 2009 garden season. The flesh was VERY watery and stringy. Is this normal? I prefer the dry thick winter squash flesh over the wet. Let me know what your Seminole were like and where you got your seed. I got my seed from Baker Creek.
